Chinese Vegetable Noodles

Ingredients to make Chinese Vegetable Noodles

  • Hakka Noodles 400 gms (2 pkts)
  • cabbage (shredded) 2 cup
  • capsicum (thinly sliced) 1 cup
  • Beans (thinly sliced) 1 cup
  • carrot (thinly sliced) 1/2 cup
  • spring onion (chop whites separately) 1/2 cup
  • garlic (chopped) 4 cloves
  • Soy sauce 3 tsp
  • red chilli or green chilli sauce 1-2 tsp
  • pepper powder 1 tsp
  • vinegar (distilled white) 1 tsp
  • Ajino moto/MSG (optional) 1/2 tsp
  • salt to taste

How to make Chinese Vegetable Noodles

  1. Cook noodles in 2 litres of boiling water adding salt and 2 tbsp oil. When done drain and run under cold water and drain completely and keep aside.
  2. Heat 3 tbsp oil in a big pan. On high heat stir fry garlic.
  3. Add cabbage, capsicum, white of onion, beans, carrot, and stir fry for 3 min. Carrot and beans can be steam cooked till half done and added along with other vegetables to keep them evenly crisp.
  4. Add soy sauce, chili sauce, pepper, salt and mix.
  5. Add noodles and mix everything well.
  6. Sprinkle few drops of vinegar.
  7. Garnish with greens of spring onion.

My Tip:

I placed the prepared noodles in preheated oven for 10 min. for a dry vegetable noodle. Serve hot with manchurian side dish.
