Chicken Ghee

Ingredients to make Chicken Ghee

  • chicken 500 gm
  • masala for grinding : kashmiri red chilly 6-8
  • whole red chillies 5-6
  • coriander seeds 2 tbsp
  • fennel seeds 1 tbsp
  • cumin seeds 1 tsp
  • black pepper corns 8-10
  • cinnamon Stick 1
  • star anise 1
  • laung 5-6
  • hung curd 1 cup
  • turmeric 1/2 tsp
  • salt as per taste
  • onion finely chopped 1
  • ghee 2 -3 tbsp

How to make Chicken Ghee

  1. Dry roast the masalas listed for grounding and make a fine powder.
  2. Take the chicken pieces in a bowl, add the hung curd, turmeric powder, salt and the ground masala.
  3. Marinate for an hour.
  4. In a pan, heat ghee, add the onions and cook until translucent.
  5. Add the marinated chicken and roast until done.
  6. Serve with phulkas.

My Tip:

Place the chicken pieces in batches and do not overcrowd the pan. Take care of not over cooking it, else the chicken will become dry and chewy.
