ABOUT Arzak Eggs RECIPE

The name can be confusing, but actually, Arzak Eggs are just poached eggs, made a little differently. The dish gets is name from Spanish chef Juan Mari Arzak, who popularized the technique.

Ingredients Serving: 2

  1. Eggs - 4, at room temperature
  2. Bell pepper (red & green) - 2 tsp, finely chopped
  3. Broccoli - 2 tsp, finely chopped
  4. Coriander greens - 2 tsp, finely chopped
  5. Red chili flakes - a sprinkle
  6. Cheddar cheese - 1 to 2 tbsp, grated
  7. Salt - to taste
  8. Oil - to brush on cling film/plastic wrap
  9. Water - for poaching eggs

Instructions

  1. Line two bowls (large enough to hold 2 eggs), with cling wrap, ensuring the cling wrap is large enough to be tied into a bundle/potli. Brush the inside liberally with oil.
  2. Sprinkle 1 tsp each of finely chopped bell peppers, broccoli, coriander, cheese and chili flakes into each cling wrap lined bowl.
  3. Break 2 eggs into each bowl, season with salt.
  4. Now bring the ends of the cling wrap together, and secure it firmly with kitchen strings or yarn, tying it to make a potli shape.
  5. Heat a deep-bottomed pan with approx 6 to 7 cups of water.
  6. Gently place the egg bundles into the boiling water, and let them poach. For soft-boiled eggs, poach for 5 mins. For semi-soft poached eggs, boil for 6 to 7 mins. For hard-boiled eggs, poach for 10 mins.
  7. Once you have poached them for sufficient duration, use a slotted spoon to gently lift them off the water.
  8. Keep a platter ready; you may add toast, some lettuce, tomatoes and onion rings.
  9. Carefully, snip the tied end of the cling wrap, and discard the plastic wrapping. Place the eggs on the ready platter, or enjoy them individually.
