Aloo Capsicum

Ingredients to make Aloo Capsicum

  • Boiled and peeled medium sized potatoes diced 4
  • capsicum medium sized diced 4
  • onions chopped 3/4 cup
  • tomatoes chopped 1 cup
  • ginger chopped 1 tbsp
  • garlic chopped 1 tbsp
  • cumin seeds 1 tsp
  • anardana powder 1/2 tsp
  • Degi mirch 1 tsp
  • turmeric powder 1 1/2 tsp
  • Garam masala 1/2 tsp
  • coriander powder 1 tsp
  • Dried methi leaves 1 tbsp
  • green chillies chopped 2-3
  • oil 3 tbsp
  • salt to taste
  • coriander leaves 2 tbsp

How to make Aloo Capsicum

  1. Heat oil, add cumin seeds, ginger, garlic, green chillies, anardana, degi mirch, turmeric, onions and saute until translucent.
  2. Add tomatoes and saute till oil separates.
  3. Now add coriander powder, salt, capsicum, cover and cook on low heat till half cooked.
  4. After around 6-7 minutes, add potatoes, garam masala, methi. Mix lightly, cover and cook again for five minutes.
  5. Then add coriander leaves and serve.

My Tip:

Can add 1/2 tsp sugar, it will give shine to capsicum.
