ABOUT Beetroot Thoran RECIPE

Keralites dish are incomplete without any thoran or mezhukuperatty (fries). Thoran is a dry side dish made mostly with different types of vegetables.Thoran is a vegetable stir-fry that is popular in Kerala. It is one of the dishes served for Onam Sadya. This simple and delicious stir-fry is best served with steamed rice.

Ingredients Serving: 4

  1. Beetroot - 1 big finely chopped or grate
  2. Onion - 1 big finely chopped
  3. Garlic - 4-5 cloves finely chopped
  4. roasted gram seeds( pota kadla) - 1 tbsp
  5. Urad Daal - 1 tsp
  6. Mustard seeds - 1 tsp
  7. Cummin Seeds - 1 tsp
  8. Curry leaves few sprigs
  9. Coconut oil as required
  10. Grated cocnut - 2-3 tbsp
  11. Red chillies - 3-4 nos
  12. Salt to taste

Instructions

  1. Heat oil, add mustard, cumin seeds, roasted gram, urad dal and fry until it turns brown in color.
  2. Add curry leaves, onion, garlic and fry until it turns little pink in color.
  3. Add beetroot, fry for 5-7 mins, add salt and mix well.
  4. Add grated coconut, give a nice mix and switch off flame.
  5. Serve hot with rice.
