Crackling Spinach with Egg Fritters

Ingredients to make Crackling Spinach with Egg Fritters

  • spinach 2 bunch (500 grams)
  • eggs 3 no
  • onion 1 big
  • garlic finely chopped 2 tsp
  • ginger finely chopped 2 tsp
  • red chilli 2 no
  • red chilli flakes 1 tsp
  • pepper ground 1 1/2 tsp
  • sugar 2 tsp
  • Powdered sugar 1 Tsp
  • Soya sauce 2 tsp
  • Corn flour 2 tsp
  • Parseley 1 tsp
  • coriander leaves 1 tsp
  • sesame seeds 2 tsp
  • salt to taste
  • olive oil 1 tsp
  • oil for deep frying

How to make Crackling Spinach with Egg Fritters

  1. Remove stems and wash spinach leaves.
  2. Let them dry properly and cut finely like small stripes.
  3. Boil eggs. Mash them coarsely with hands.
  4. Add salt, pepper, half soya sauce, half Parsley, 3/4 tsp chilli flakes and 1/2 tsp olive oil. Keep aside for marination for 5 minutes.
  5. Heat olive oil in a pan, add chopped onion, add half ginger and garlic. Saute, add sugar and let it get brown.
  6. Add soya sauce, pepper, 1/2 tsp chilli flakes. Add little water, make sauce and keep aside.
  7. Now add cornflour to the egg mixture, make balls, heat oil and deep fry all fritters. Add them to the sauce and saute a little on heat. Keep aside.
  8. Heat oil and deep fry spinach by keeping it in a metal strainer. Take little at a time and spread over absorbent paper. Fry it crispy. Add salt pepper and ground Sugar.
  9. Now in a very little oil fry garlic, red chilli and sesame seeds. Let it crackle. Add this to spinach.
  10. Spread the spinach in a serving plate and arrange fritters with sauce on it.
  11. Serve immediately.

My Tip:

Let the Spinach dry well to get the Crackling Spinach after frying. Its a good snack too. Can have crisp Garlic bread and soup of your choice.
