Ingredients to make Aloo Posto

  • 50 grams khuskhus (posto), soaked and made into a paste
  • 6 medium sized potatoes, diced and kept in water
  • 4-5 green chillies, slit
  • 4 tablespoons of mustard oil
  • salt to taste
  • kalonji for tempering - 1/2 tsp
  • 1/2 cup water only if required

How to make Aloo Posto

  1. Put oil in the wok and heat to smoking point.
  2. Add the green chillies and kalonji.
  3. Put in the diced potatoes. Stir till the oil coats the potatoes.
  4. Add the salt. Stir well. Cover and cook until potatoes are cooked.
  5. Add the khuskhus (posto) paste. Mix well.
  6. Add water if necessary to make it like a thick curry.
  7. Remove from heat and serve with hot rice.
