ABOUT Egg Pakora Curry RECIPE

Egg pakora cooked with tomato, yoghurt and cashew nut based curry.

Ingredients Serving: 4

  1. Eggs 4
  2. Yoghurt 2 tsp
  3. Onions 2 large
  4. Garlic 4 pods
  5. Bay leaf 1
  6. whole coriander seeds 1 tsp
  7. whole cumin seeds 2 tsp
  8. Tomato sauce 2 tsp
  9. cashew nuts 4 - 5
  10. Cloves 3
  11. Cinnamon stick 1/2 inch
  12. cardamom small 2
  13. Black pepper 3
  14. Water 1/2 cup
  15. Turmeric powder 1/2 tsp
  16. Salt 1 tsp
  17. Tomato 1 medium
  18. Kashmiri chilli powder 2 tsp
  19. flour or maida 2 tsp
  20. gram flour or besan 3 tsp
  21. Coriander leaves for garnishing
  22. poppy seeds 1/4 tsp (optional)

Instructions

  1. Boil eggs.
  2. Chop onions, ginger, garlic and tomato.
  3. Soak cashew nuts and poppy seeds in 3 tsp water for 10 minutes.
  4. Mix flour, green gram flour, chilli powder, salt, ginger garlic paste and very little water. keep aside for 10 minutes.
  5. Cut the eggs in halves, dip in the flour mixture, coat both sides.
  6. Dry roast coriander seeds, cumin seeds, cloves, cardamom, cinnamon and black pepper for 3 minutes.
  7. Blend onions, ginger, garlic, dry roasted cardamom, cinnamon, cloves and black pepper with little water.
  8. Make a smooth paste and set aside.
  9. Take a nonstick pan, heat oil 2 tsp, fry marinated eggs until they are red and crispy.
  10. Keep aside.
  11. Make tomato puree.
  12. In the same pan heat 2 tsp oil.
  13. Add bay leaf.
  14. Add ground paste, turmeric powder, chilli powder and saute for 5 minutes.
  15. Add tomato puree and tomato sauce.
  16. Make a fine paste of cashew nuts and poppy seeds.
  17. Now add the cashew paste.
  18. Fry for 5 mins on medium heat.
  19. Add salt.
  20. Now add water.
  21. Boil for 5 mins on high heat, add fried eggs.
  22. Cover and cook for another 5 mins.
  23. Garnish with coriander leaves.
