Carrots Cinnamon Walnut Cake

Ingredients to make Carrots Cinnamon Walnut Cake

  • All purpose flour 1 cup & 2 tbsp
  • Vanilla custard powder 2 tbsp
  • Carrots 4 small (grate)
  • Curd 3/4 cup
  • Oil 1/4 cup
  • Hot milk 3 tbsp
  • Brown sugar 1/2 cup
  • Vanilla essence few drops
  • 2 pinches cinnamon powder
  • Salt 1 pinch
  • Chopped walnuts 2 tbsp
  • Baking powder 1/2 tsp
  • Baking soda 1/2 tsp

How to make Carrots Cinnamon Walnut Cake

  1. Sieve the dry ingredients 2-3 times.
  2. Mix curd, oil, sugar till the sugar dissolves.
  3. Add cinnamon powder, carrots and essence. Mix well.
  4. Add milk.
  5. Add dry ingredients 1/3 at a time, mixing very slowly.
  6. Preheat the oven at 180°C
  7. Mix in one direction very slowly ensuring no lumps.
  8. Grease a tin and pour the batter. Top with chopped walnuts.
  9. Bake for 35-40 minutes or till toothpick comes out clean.
  10. After 5 minutes take out of the tin and let it cool.

My Tip:

Adding custard powder makes cake more soft and spongy.
