ABOUT Carrots Cinnamon Walnut Cake RECIPE

Carrots and walnuts add nutrition and the spicy cinnamon flavour adds aroma to it.

Ingredients Serving: 10

  1. All purpose flour 1 cup & 2 tbsp
  2. Vanilla custard powder 2 tbsp
  3. Carrots 4 small (grate)
  4. Curd 3/4 cup
  5. Oil 1/4 cup
  6. Hot milk 3 tbsp
  7. Brown sugar 1/2 cup
  8. Vanilla essence few drops
  9. 2 pinches cinnamon powder
  10. Salt 1 pinch
  11. Chopped walnuts 2 tbsp
  12. Baking powder 1/2 tsp
  13. Baking soda 1/2 tsp

Instructions

  1. Sieve the dry ingredients 2-3 times.
  2. Mix curd, oil, sugar till the sugar dissolves.
  3. Add cinnamon powder, carrots and essence. Mix well.
  4. Add milk.
  5. Add dry ingredients 1/3 at a time, mixing very slowly.
  6. Preheat the oven at 180°C
  7. Mix in one direction very slowly ensuring no lumps.
  8. Grease a tin and pour the batter. Top with chopped walnuts.
  9. Bake for 35-40 minutes or till toothpick comes out clean.
  10. After 5 minutes take out of the tin and let it cool.
