Egg Xacuti

Ingredients to make Egg Xacuti

  • eggs - 6 boiled and peeled
  • For masala 1 :
  • green chillies - 4
  • ginger - 1" piece
  • garlic - 6-7 cloves
  • coriander leaves - handful
  • For masala 2 :
  • coconut - 1 cup grated
  • coriander seeds - 1/2 tsp
  • cumin seeds - 1/2 tsp
  • fennel seeds - 1/4 tsp
  • fenugreek seeds - 1/4 tsp
  • poppy seeds - 1/4 tsp
  • peppercorns - 8-9
  • cinnamon - 1/2" piece
  • cardamom - 1
  • star anise - 3-4 petals
  • Stone flower - 1
  • cloves - 4-5
  • mace - 3-4 strands
  • bay leaf - 1
  • Dry red chillies - 7-8
  • turmeric - 1/4 tsp
  • tamarind - 1 lemon sized ball
  • onions - 2
  • oil

How to make Egg Xacuti

  1. Slice half an onion and chop the rest.
  2. Make the first masala paste and apply to the boiled eggs. Cut eggs into halves or make tiny incisions if keeping whole.
  3. You can fry the eggs lightly in a pan with little oil. This step is optional.
  4. Heat a pan. Dry roast all the whole spices and keep aside. Then dry roast the coconut till brown. Fry the sliced onion. Keep all aside for cooling. Then grind all together along with tamarind, turmeric and water to make a paste.
  5. Heat oil in a pan, add the chopped onions and fry till slightly brown.
  6. Add the coconut paste and cook till the raw smell goes and curry starts boiling.
  7. Add in the eggs and cook for 4-5 mins.
  8. Serve with roti or pav.

My Tip:

This masala base can be used with chicken and mutton as well.
