Hard cooked eggs with a sausage crust, combined with a savory sauce.

3 Hard boiled eggs
1 1/2 cup Soaked soya chunks for 10 minutes
2 Red chilli fresh, finely chopped
1 Small onion, finely chopped
Ginger garlic paste 1 tsp
1 tsp Chilli powder
1 slices Fresh bread powdered
Bread crumbs 1/2 cup
1 Egg
Oil for Deep frying
1/2 cup Tomato sauce
1 tbsp Mustard sauce
1 small Finely chopped onion
5 Garlic pods finely chopped
1 tbsp Brown sugar
2 tbsp Vinegar
1 tbsp Olive oil
Salt to taste
250 gms Asparagus
Instructions
Squeeze the soaked soya chunk and make coarse powder. Keep aside in a jar. Make coarse powder of the bread pieces. Add this coarse bread powder to the coarse soya chunks.
To this add onion, green chilli, ginger garlic paste, chilli powder, salt and 1 beaten egg. Mix well. Keep this in the fridge for 20 minutes.
Take bread crumbs and spread evenly on a plate. Keep aside.
Heat the Kadai or a deep pan. Add enough oil.
Take a hand full of soya minced mixture. Stuff the boiled egg. Cover well and roll it on the bread crumbs. Do the same for the other 2 eggs. Keep aside.
When the oil is hot, add the prepared eggs slowly. Fry the eggs until golden in color on a low flame.
Take out the scotched egg on a kitchen paper.
For preparing the sauce for scotch egg:
Heat the pan and add oil. When oil is hot add chopped garlic and fry until brown in color or for 2 minutes.
Now add the onions and stir for 1 minutes. To this add vinegar, brown sugar, mustard paste and ketchup. Stir. Now add 1/4 cup water and salt. Cook on a low flame.
For the Asparagus:
Clean and cut it into 4 inches in size. Boil water and add the cleaned asparagus. Cook for 5 minutes.
Strain it. Heat another pan, add 1/2 tsp olive oil and the strained asparagus. Stir the asparagus for 2 minutes and add salt and oregano to it. Stir for few minutes and switch off the flame.
For arranging the plate:
Take a serving plate and add sauce. Arrange the scotch egg and arrange the fried asparagus. Grilled tomato can also be used.
Yummy and tasty scotch egg with sauce is ready.
