Ingredients to make Shakshuka

  • 1/2 onion peeled and diced
  • 1 medium Yellow or green bell pepper, chopped
  • 4 large tomatoes , diced or 1 can of diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 4 clove garlic, minced
  • 5 eggs
  • 1 inch ginger , chopped
  • 1 tsp Cayenne pepper
  • 1 tsp cumin
  • 6/7 olives( optional)
  • Salt and pepper to taste
  • Pinch of sugar
  • Chopped cilantro ( coriander leaves)

How to make Shakshuka

  1. Heat a deep pan on medium flame. Slowly warm olive oil . Add chopped onions and saute for few minutes. Add ginger and garlic and continue to saute. Add bell peppers and saute for another 5 - 7 minutes until softened. Add tomatoes and tomato paste.
  2. Add spices and sugar, stir well and let it simmer for 5/7 minutes.
  3. Add salt/ pepper and some cayenne pepper.
  4. Make a small hole and crack the eggs one at a time directly over the tomato mixture, making sure to space them evenly over the sauce.
  5. Cover the pan with the lid and let it cook for 10 minutes or so.
  6. Garnish with olives and cilantro.
  7. Add feta cheese if you desire . Eat for breakfast , lunch or dinner . It can be used as a complete meal by itself or as a side dish .
