Steamed Rice flour dumplings filled with lentils.

Ingredients Serving: 5

  1. Rice Flour - 2 cups
  2. Wheat Flour - 1 Cup
  3. Lukewarm water for kneading the dough
  4. Salt to taste
  5. Soaked urad dal - 1 cup
  6. Asafoetida 1 pinch
  7. Green chillies - 3
  8. Ginger 1 inch piece
  9. Cumin Seeds - 1tsp
  10. Fennel seed - 1sp
  11. Red chilli powder- 1 tsp
  12. Graam masala - 1 tsp
  13. Coriander leaves a bunch for chutney as well as for the lentil filling
  14. 1 Tomato for chutney
  15. 2 to 3 Garlic pods for chutney
  16. Refined oil

Instructions

  1. For the dough: Mix 2 cups rice flour and 1 cup wheat flour in a bowl. Add salt and with help of lukewarm water make a medium soft dough. Try not to make a hard dough so knead the flour with soft hands.
  2. For Dal Filling: Soak the urad dal overnight or for 3 to 4 hours. Now grind the dal in a grinder along with all the spices mentioned with minimal water. Tip: If the filling becomes too wet, add 2 to 3 tbsp gram flour.
  3. For shaping the farahe/dumplings : Pull out a small portion of rice dough and make a 1cm thick small circle with help of rolling pin. Place the dal mixture over it, fold and make a semi circle and seal from sides. Do the same with the remaining dough and dal.
  4. These farhe are cooked in steam so while you are shaping them, boil water in an open pressure cooker with little sat and oil. Now one by one start dropping the farhe in this boiling water.
  5. Once all the dumplings/farhe are submerged in water , close the lid. Pressure cook them for 4 to 5 whistle. To check if they are done, prick a knife in the dumpling and if it comes out clean, they are done.
  6. You will get a soft wrapper with aromatic spicy filling. Once cooled you can cut them and serve right away, if you wish to grab a low cal bite. But the same dumplings can be sauted in a little oil to enjoy as tea time snack.
  7. Serve them with spicy green tomato chutney.
