CHOCOLATE SWISS ROLL WITH STRAWBERRY FILLING

Ingredients to make CHOCOLATE SWISS ROLL WITH STRAWBERRY FILLING

  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup flour
  • Powdered sugar for dusting
  • For the filling:
  • 1/2 cup Whipping cream
  • 1/4 + 1/2 cup Fresh strawberries
  • 2 tsp + 4 tsp Powdered sugar

How to make CHOCOLATE SWISS ROLL WITH STRAWBERRY FILLING

  1. Preheat the oven to 200 degree C. Grease and line a swiss roll pan.
  2. In a large mixing bowl beat the eggs and sugar until doubled in volume. Sift the flour and cocoa into the egg mixture and gently fold it together. Pour this to the greased pan and bake for 10 - 12 minutes.
  3. Meanwhile onto a large baking paper sprinkle lots of powdered sugar. Transfer the hot sponge onto this, remove the baking paper used while you baked and gently roll it. Set aside to cool completely.
  4. While its cooling make the strawberry filling. Mash 1/4 cup strawberries. Beat the cream with 2 tsp of powdered sugar until soft peaks. Mix in the mashed strawberries and keep in the fridge until used.
  5. In another bowl mash the remaining 1/2 cup strawberries with 4 tsp of sugar. Unroll the sponge and spread the filling evenly, leaving 2cm from all the sides. Now spread the mashed strawberries on top of it reserving some for garnishing.
  6. Now roll back carefully and transfer to a serving plate. Dust with powdered sugar and spoon the reserved mashed strawberries.
