Eggxotic Cole Au Gratin

Ingredients to make Eggxotic Cole Au Gratin

  • 3-4 eggs
  • 1/2 cabbage, shredded
  • 3 tbsp Mayonnaise
  • 2 tbsp Milk
  • 3-4 Bread slices
  • 1 tsp freshly ground Black pepper
  • salt to taste
  • 1 cup grated cheese (you can adjust according to your taste)
  • Oil/butter for greasing

How to make Eggxotic Cole Au Gratin

  1. Grease a baking dish with oil or butter. Preheat oven to 200 degree C. This may take about 10 minutes.
  2. Now in a seperate bowl, add chopped cabbage or mixed veg. Mix mayonnaise and season with black pepper and salt. If you find the mixture to be little dry then add some milk to the mixture.
  3. Beat egg in a seperate bowl and season with pepper and salt.
  4. Tear the slices of bread and spread the pieces on the greased dish. Add the mixture of cabbage on the layer of bread. Sprinkle some cheese. Pour the egg mixture. Again, spread some pieces of bread. Add remaining mixture of cabbage and again, a layer of sprinkle cheese and the remaining egg mixture. Sprinkle some grated cheese on top.
  5. Bake at 200 degree C for 30-40 minutes or till the egg is set.

My Tip:

1. The bread can be replaced by leftover chapatti which is shredded into pieces and layered between the vegetables and egg. 2. Cabbage can be replaced by 1/2 cup of frozen/ fresh mixed vegetable.
