Prawn Egg Veggie Schezwan Noodles

Ingredients to make Prawn Egg Veggie Schezwan Noodles

  • 500 g egg noodles
  • 50 g carrots, Beans and Cabbage each, julienne
  • 2 bundles spring onions
  • 7-8 garlic cloves
  • 50 g Prawns, cleaned n deshelled
  • 6-8 eggs
  • Soy sauce 1 tsp
  • Schezwan paste 2 tbsp
  • Barbecue sauce 1 tsp

How to make Prawn Egg Veggie Schezwan Noodles

  1. Marinate prawns in the sauces. In a wok, heat about a tbsp of oil, add a tsp of minced garlic and saute till aroma is emitted. Add prawns, cook and keep aside.
  2. In the wok heat enough oil and saute remaining minced garlic. Add in the beans and saute for a min. Add in carrots, cabbage and spring onions. Cook it till just crisp. Add in the sauces as per your taste.
  3. Beat eggs and make thin omelettes. When cool, stack them and cut into julienne.
  4. In a large container boil water with salt, add in the noodles. Cook only for about 3 mins. Strain in a colander. Pour cold water over to prevent sticking.
  5. In a non stick pan add cooked noodles and stir fry for a few minutes. Now mix all ingredients and serve hot.
