Ingredients to make Eggs In Tamarind Sauce( Guddu Pulusu )

  • eggs - 4 (boiled)
  • onion- 2 (medium size, chopped)
  • tomato - 2 (chopped)
  • garlic- 3 flakes (crushed)
  • tamarind - Lemon size ball
  • mustard - 1/2 tsp
  • urad dal - 1/2 tsp
  • red chilli powder - 1 tsp
  • turmeric powder - 1/4 tsp
  • asafoetida powder - 1/4 tsp
  • jaggery - 2 tsp
  • salt - as per taste
  • water - 2 Cups
  • oil - 2 tbsp

How to make Eggs In Tamarind Sauce( Guddu Pulusu )

  1. Peel the boiled eggs. Prick with fork all over and shallow fry them till golden brown. Keep aside
  2. Soak the tamarind in 2 cups of hot water for 10 mins. Remove the seeds and squeeze the pulp. Keep aside
  3. In a pan, add oil, add mustard seeds, urad dal. When they splutter, add chopped onions, fry for sometime.
  4. Now add the garlic, when the garlic releases its aroma add tomato and asafoetida powder. Fry for 5 minutes.
  5. Pour the tamarind extract, add turmeric powder, red chilli powder, jaggery and salt. Close pan. Boil on medium heat for 10 mins. You can add more water if required.
  6. Now add the fried eggs to this gravy. Let it cook covered for a few more minutes.
  7. Garnish with chopped coriander. Serve hot with steamed rice.

My Tip:

Always prick the eggs before frying ,that way they splutter less when you fry and the gravy also coats the eggs well.
