Ingredients Serving: 4

  1. 1 kg - Chicken, cleaned and cut into curry size pieces
  2. 3 - Small potatoes, peeled and halved
  3. 1 - Large onion, grated
  4. 1 - Large tomato, grated
  5. 5 - Garlic cloves, crushed
  6. 1 inch piece - Ginger, grated
  7. 1 inch piece -Cinnamon
  8. 4 - Green cardamom
  9. 1 - Black cardamom
  10. 6 - Cloves
  11. 2 - Bay leaves
  12. 1 teaspoon - Turmeric powder
  13. 1/2 teaspoon - Red chilli powder
  14. 1 tablespoon - Coriander + cumin powder
  15. Salt to taste
  16. Water as required
  17. 3 tablespoons - Mustard oil

Instructions

  1. Heat oil in a pressure cooker. Add whole garam masalas to the oil.
  2. Add the chicken pieces, cook for about five minutes on high heat till the chicken pieces are coated with oil.
  3. Add the potato pieces. Cook for two minutes then add the tomato, ginger and garlic paste, saute for five minutes.
  4. Add the dry powdered masalas. Add salt and cook for some more time until a caramelized colour is achieved.
  5. Pour water and cook on high heat for one whistle. Then continue to cook on minimum heat for two whistles.
  6. Let the cooker cool. Open lid, add chopped coriander and serve hot with rice.
