Vegetable Manchurian

Ingredients to make Vegetable Manchurian

  • 1/2 cup grated carrots
  • 1/2 cup grated onions
  • 1 cup grated cabbage
  • 1/cup grated cauliflower
  • 1/2 cup green beans chopped finely
  • 6 cloves garlic, chopped finely
  • 3 green chillies, chopped finely
  • 4 tablespoons of cornflour
  • 2 tablespoons of white all purpose flour
  • salt to taste
  • oil to deep fry the Manchurian balls
  • For the Manchurian gravy
  • 1 large onion diced
  • 1 large green capsicum diced
  • 4 cloves garlic coarsely chopped
  • 2 green chillies coarsely chopped
  • salt to taste
  • 5 tablespoons of soy sauce
  • 2 tablespoons of tomato ketchup
  • 1 tablespoon of white vinegar
  • 1 Cup water
  • 2 tablespoons of cornflour
  • Few spring onion greens for garnish

How to make Vegetable Manchurian

  1. Mix all the grated vegetables, salt, chopped vegetables, cornflour and flour.
  2. Mix well and set aside for ten minutes
  3. The vegetables will turn mushy by releasing water.
  4. Mix well and make into balls. Arrange them on a plate and deep fry these in hot oil
  5. Once done , in the same hot wok, keep about two tablespoons of the oil and remove the rest.
  6. To this oil add the garlic and green chillies, diced onions and capsicum.
  7. Saute for two minutes and add all the sauces and salt to taste.
  8. Add water and let it come to a boil. Now add the manchurian balls.
  9. Add the cornstarch and stir well until the sauce thickens to your taste.
  10. Turn off the heat serve hot garnished with the chopped spring onion greens.
  11. Eaten best with Chinese fried rice or noodles .
