Ingredients Serving: 4

  1. 3 large eggs separated
  2. 30 gms cocoa powder
  3. For the filling & icing - 25 gms butter
  4. 75 gms caster sugar
  5. 75 gms dark chocolate broken into squares
  6. 1 tbsp golden syrup
  7. 1 cup double cream
  8. 100 gms icing sugar sifted
  9. Fruit sauce as required
  10. Sugar leaves and flower to decorate

Instructions

  1. To make the log, whisk the egg yolks with the caster sugar until the mixture is very light and frothy, and leaves a trail when the whisk is lifted out of it. Fold in the cocoa powder.
  2. Whisk the egg whites until they are stiff, then fold them into the chocolate mixture.
  3. Pour the mixture into the lined Swiss roll tin and spread evenly out to the edges, taking care not to knock out too much of the air.
  4. Bake the cake in a preheated oven at 180°C for 15 minutes, or until the cake springs back when lightly touched in the center.
  5. Remove the cake from the oven and turn it out on to a sheet of baking parchment, dusted with icing sugar.
  6. Leave the lining paper on the cake, and cover the whole thing with a clean, damp tea towel. Leave the cake to cool completely.
  7. To make the icing, melt the butter and chocolate together in a bowl over a pan of hot water.
  8. Stir in the syrup and cream. Beat in the icing sugar until smooth.
  9. Whisk the remaining cream until it holds its shape. Unravel the cake, spread the cream over the top, then carefully roll up again into a log.
  10. Lift the log on to a plate.
  11. Spread the icing over the log (don’t cover the ends), then use a fork to mark the icing to give the effect of tree bark.
  12. Decorate with fruit sauces ,leaves and flower decorations.
