FALAFEL WITH HUMMUS AND PITA BREAD

Ingredients to make FALAFEL WITH HUMMUS AND PITA BREAD

  • 1 cup dry chickpeas soaked for about 6-8 hours
  • 1 small onion chopped
  • 2 garlic cloves diced
  • 1/2 cup finely chopped coriander leaves
  • 1 tbsp flour
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp crushed black pepper
  • salt to taste
  • oil for frying

How to make FALAFEL WITH HUMMUS AND PITA BREAD

  1. Drain and rinse the chickpeas. Place them into a food processor along with the chopped onion, garlic cloves, flour, coriander and cumin powders, black pepper and salt. Pulse and stir regularly until you get a coarse mixture.
  2. Pour the mixture into a bowl, add the chopped coriander leaves and mix well with a fork. Do not leave in any large chunks of chickpeas that might have remained.
  3. Refrigerate the mixture for an hour or so.
  4. Heat oil in a pan. Do not let the oil get too hot or the falafels will not cook well in the centre. Make small, slightly flattish balls and fry for about 2 minutes on each side. Drain on a kitchen towel.

My Tip:

Falafels are best served with hummus and pita bread and a salad to go. For hummus, take a cup of chickpeas that have been soaked and cooked well. Put them in a blender with 2-3 cloves of garlic, juice of 1 whole lemon, 1 tbsp of tahina (sesame paste available in stores), salt to taste and a dash of olive oil. You can add the leftover water from the cooked chickpeas to adjust consistency. Blend to a smooth paste. Pour into serving bowl, sprinkle cayenne pepper and drizzle olive oil generously.
