ABOUT FALAFEL WITH HUMMUS AND PITA BREAD RECIPE

Eleven years in Dubai could not satiate my love for Arabic food. This recipe is a powerhouse of protein and absolutely healthy.

Ingredients Serving: 4

  1. 1 cup dry chickpeas soaked for about 6-8 hours
  2. 1 small onion chopped
  3. 2 garlic cloves diced
  4. 1/2 cup finely chopped coriander leaves
  5. 1 tbsp flour
  6. 1 tsp Coriander powder
  7. 1 tsp cumin powder
  8. 1 tsp crushed black pepper
  9. Salt to taste
  10. Oil for frying

Instructions

  1. Drain and rinse the chickpeas. Place them into a food processor along with the chopped onion, garlic cloves, flour, coriander and cumin powders, black pepper and salt. Pulse and stir regularly until you get a coarse mixture.
  2. Pour the mixture into a bowl, add the chopped coriander leaves and mix well with a fork. Do not leave in any large chunks of chickpeas that might have remained.
  3. Refrigerate the mixture for an hour or so.
  4. Heat oil in a pan. Do not let the oil get too hot or the falafels will not cook well in the centre. Make small, slightly flattish balls and fry for about 2 minutes on each side. Drain on a kitchen towel.
