This is a traditional Bengali dish specially prepared during winters and in special occasions.

Ingredients Serving: 2

  1. For dum aloo: 1/2 kg potato
  2. Ginger garlic paste 1 tsp
  3. Onion paste
  4. Chopped tomato
  5. Whole Cumin seeds
  6. Bay leaf
  7. Few green chilies
  8. Turmeric Powder
  9. Red chilli powder
  10. Salt to taste
  11. Mustard oil
  12. Chopped coriander leaves

Instructions

  1. First boil the potatoes and let them cool. Now peel off the potato and prick them with a knife. Then deep fry the potato till golden brown.
  2. In the leftover oil put bay leaf, cumin seeds and let them crackle. Then one by one add ginger garlic paste,onion paste and all the dry ingredients. Cook till oil separates.
  3. Then add the fried potatoes and again cook for sometime. Add some warm water.
  4. Let the gravy become thick and as soon as oil floats add fresh chopped coriander leaves and some slit green chilies. Check seasoning.
  5. For kachori:make a dough with refined flour,whole wheat flour, little salt,little oil and water.keep it aside.
  6. For the stuffing grind peas with some green chilies. Put oil in a non stick pan and add some cumin seeds and bay leaf. Then add some hing and ginger paste.
  7. As the flavor comes out add the peas paste. Add some sugar and salt to taste. Finally add some roasted cumin powder.
  8. To make the kachories make equal ball from the dough. With the help of your fingers flatten the dough and put some stuffing at the centre and close it pressing it together.
  9. With the help of some dry flour roll out into puris. Then deep fry the puris in hot refined oil. Now serve these kachories with the dum aloo.
