Ingredients to make Egg and Capsicum Kurma-Hyderabad style

  • eggs:- 4
  • Ground to paste
  • onion:- 1 thinly sliced
  • coconut pieces :- half cup
  • ground nut:- half cup
  • sunflower seeds/nigella/cashew :- I have used sunflower seeds
  • ginger Garlic Paste
  • capsicum:- cut in roundles, extra pieces can be used in gravy
  • oil as required
  • turmeric:- 1 tsp
  • chilli powder:- 2 tsp
  • Green chillies :- 4 nos
  • Garam masala;- 1 tsp
  • Handful mint leaves
  • handful coriander leaves
  • yogurt:- half cup

How to make Egg and Capsicum Kurma-Hyderabad style

  1. Heat non stick pan roast coconut pieces until it becomes light brown in color and set aside
  2. Now roast ground nut and set aside
  3. Now roast sunflower seeds
  4. now fry onion in little oil and set a side to cool down.
  5. Once all roasted ingredients cools down grind to fine paste
  6. Now cut the roundels of capsicum and place it in hot nonstick pan, crack egg in to it and cook in low flame. Cover it with lid and cook.
  7. Once the base is cooked properly you can place this in microwave for 2 mins that will help you egg cook faster
  8. Heat another pan add ginger garlic paste and fry for mins add remaining left over slice of capsicum and fry well.
  9. Add turmeric, chilly powder ,garam masala and stir well, add ground paste, Yogurt and give a nice mix
  10. Add water, slow the heat of your stove cover with lid and cook for 6-7 mins
  11. Add Salt,coriander leaves and mint leaves stir well.
  12. Switch off heat and add capsicum egg pieces.
  13. Serve hot with Rice or Paratha
