Badami Kaddu Ki Kheer

Ingredients to make Badami Kaddu Ki Kheer

  • bottle gourd or lauki 1 medium one grated
  • Condensed milk 4 to 5 tbsp
  • cardamom powder 1 tsp
  • Readymade badam mix 1 packet
  • Milk 2 litres
  • sugar about 1/2 cup
  • pistachios as needed to sprinkle on top
  • Dried powdered rice 100gm

How to make Badami Kaddu Ki Kheer

  1. Wash the rice, soak it in enough water and leave it to dry.
  2. After it dries, powder it and keep aside
  3. Boil the milk and allow it to simmer on low flame until it reduces to 3/4 th of it's original volume.
  4. Add the grated bottle gourd and cook until done.
  5. Add the condensed milk, powdered rice, cardamom powder, sugar and the readymade badam mix.
  6. Stir it briskly and adjust the consistency to your liking.
  7. Switch off the flame and garnish with pistachios.
  8. Serve it cold or warm as desired.
  9. No need to add any kesar as we are using the readymade mix here.

My Tip:

Do not use the whole bottle gourd. Just use the hard part, use the fleshy part in any curry. Also you can use the readymade badam mix available in the market like me.
