Ingredients to make Malai Sandesh

  • Chana/homemade cottage cheese: 1cup
  • Whole Milk or Full Fat Milk: 2 cup
  • cream: 1/2 cup
  • sugar: 4 tbsp
  • Green cardamom(crushed): 4-5
  • Ghee or butter to grease
  • pistachio Almonds to garnish
  • saffron: Few strands

How to make Malai Sandesh

  1. Prepare the chana or homemade cottage cheese.
  2. Mash the chana or homemade cottage cheese with the palm of your hand, mix cardamom powder, 2 tablespoon sugar, the mixture will sticky and moist.
  3. Grease a microwave safe bowl with butter or ghee. Layer the chana mix on the greased bowl. The layer should be just about 1 inch thick. Cook the chana in microwave oven for 2 min on high power.
  4. Let it stand for some time, take it out cut into small squares. Keep aside. This is the quick sandesh.
  5. In a heavy bottom pan add milk, cream and rest of the sugar. Cook over low heat till it reduce to 3/4 th.
  6. Add cubed sandesh, crushed cardamom, saffron. Mix well.
  7. Garnish with pistachio and almonds, saffron strands.

My Tip:

To make the chana boil 1 lt of whole milk and add lime juice to it, strain the curdled milk and use it make the quick sandesh
