ABOUT MOTICHOOR LADOO RECIPE

Ingredients Serving: 12

  1. 1 cup - besan flour/ chickpea flour
  2. a pinch of baking soda (optional)
  3. water as needed for making loose batter, around 3/4 cup
  4. a pinch of good quality orange food colour
  5. Oil or ghee for frying
  6. 1 cup - Sugar
  7. 1/2 cup - water
  8. 1/2 tsp - cardamom powder or rose water
  9. 1 1/2 tbsp each - melon seeds and chopped pistachios

Instructions

  1. In a large mixing bowl, add the flour, baking powder, food color and water as needed to make a smooth and flowing batter. There should not be any lumps in it.
  2. Let the batter rest for 15 minutes. Meanwhile heat a wide heavy bottom kadai and pour oil or ghee for frying.
  3. Through a fine perforated ladle pour the batter and as soon as they are into the hot oil, take out of it. We don't want them to over cook it.
  4. Now for the syrup add the sugar and water in a pan and add a pinch of food color. Make them to one thread consistency and turn off the flame.
  5. Now add the rose water or cardamom powder. Transfer the boondis to the sugar syrup and mix well to combine.
  6. Put this sugar soaked boondis into a mixer and just pulse for 2 or 3 times to get it coarsely crushed. Transfer them to a plate and add the chopped pistachios and dry roasted melon seeds.
  7. Shape them into small ladoos and you can let it rest for couple of hours. I kept it for 1 hour as I can't resist more. Garnish with some chopped pistachios and enjoy with all your near and dear ones!!!
