Ingredients to make Microwave Carrot Cake with Chocolate Cream Cheese Frosting

  • 1 cup all-purpose Flour
  • ½ cup peeled and fine grated Carrots
  • 3 tbsp. Oats powder
  •  cup Icing sugar
  • ĵ tbsp. Baking powder
  • pinch Baking soda
  • pinch of Salt
  • ½ tbsp. Cinnamon powder
  • ½ cup unsalted Butter at room temperature
  • ½ cup unsalted Butter at room temperature
  • ½ cup Milk at room temperature
  • FOR CHOCOLATE CREAM CHEESE FROSTING
  • ½ cup Cream cheese at room temperature
  • 2 tbsp. unsweetened Cocoa powder
  • ½ cup unsalted Butter at room temperature
  • 1 tbsp. Vanilla essence
  •  cup Icing sugar

How to make Microwave Carrot Cake with Chocolate Cream Cheese Frosting

  1. EGGLESS MICROWAVE CARROT CAKE
  2. Sieve and combine flour, oats powder, icing sugar, baking powder, baking soda, cinnamon powder and salt. These are our wet ingredients.
  3. In another bowl combine butter, milk and vanilla essence. Now gently fold in wet ingredients by adding spoon by spoon until everything combines well. Add in grated carrots and mix.
  4. Grease microwave safe bowl and pour in the above batter. Tap gently to spread evenly. Microwave this for 4-5 minutes.
  5. When touched with your finger, the centre of the cake should spring back. Remove from microwave and leave to cool for 5-6 minutes.
  6. Carefully remove on to cooling rack and leave it to cool completely before frosting.
  7. CHOCOLATE CREAM CHEESE FROSTING
  8. Swift cocoa powder and icing sugar and set aside.
  9. Add cream cheese and butter to a bowl and beat until creamy. Slowly add in sifted cocoa powder and icing sugar mixture.
  10. Beat until well combined. Add in vanilla essence and beat until smooth and shiny.
  11. Spread this over the above made microwave carrot cake and sprinkle colored carrot flakes. Indulge!
