ABOUT Hamantaschen Cookies (Tricorner cookies) RECIPE

Israeli Jewish delicacy, a hamantash is a filled pocket cookie or pastry recognizable for its triangular shape. The shape is achieved by folding in the sides of a circular piece of dough, with a filling placed in the centre. Idea courtesy Google.

Ingredients Serving: 20

  1. Eggs beaten 2
  2. Sugar 3/4 cup
  3. Pinch of salt
  4. Butter/ margarine cut into pieces 3/4 cup
  5. Flour 2 1/2 cups
  6. Baking powder 1 tsp
  7. Prunes sauce 2 cups
  8. 1/2 cup chopped walnuts

Instructions

  1. In a large bowl, mix together the flour and baking powder and set aside.
  2. Add the eggs, sugar and salt to the bowl and beat until light in color and the sugar is dissolved.
  3. Add the butter/margarine and continue beating until it is incorporated. Reduce beater speed to slow, and slowly add the flour, continuing to beat just until the whole mass comes together.
  4. Remove the dough to a lightly floured work surface and knead once or twice. Then flatten into a disc, wrap in cling film and chill for at least 2 hours.
  5. Meanwhile make filling for Hamantaschen which is called Providle (made of prunes & sugar)
  6. Take pitted prunes and 1/2 cup of water in a saucepan. Bring the prunes and water to a slow simmer until the prunes are very soft. Stir in about 1 cup of sugar and simmer for another 3 or 4 minutes. Set aside to cool.
  7. Puree it in a blender or food processor. Adjust sugar to taste and use for filling. Stir in 1/2 cup of finely chopped walnuts for crunchiness.
  8. Preheat oven to 180°C. Remove the chilled dough to a lightly floured work surface and roll out to about 1/4-inch thick. Cut into 4 inch rounds. Place a 1tsp of prunes sauce filling in the middle of each round.
  9. Bring up three sides of the dough to form a triangle, gently pinching together the corners. Place on a greased baking sheet and bake for 15 to 20 minutes, or until lightly browned/ browned.
  10. Cool completely. Store in airtight container/ jar.
