Whole Wheat Beet Cookies

Ingredients to make Whole Wheat Beet Cookies

  • 1 and 1/4 cups whole wheat flour (atta)
  • 75 gms (¾ stick) butter at room temperature
  • ¾ cup powdered sugar
  • 3 tablespoons beetroot puree
  • A pinch of salt

How to make Whole Wheat Beet Cookies

  1. Pre-heat the oven to 200 degrees C. Cover the baking tray with foil.
  2. Boil a medium size beetroot till just tender. Peel when cold and puree in a blender. Measure 3 tablespoons.
  3. Beat butter and sugar till light and fluffy. Mix salt and beetroot puree.
  4. Add flour and mix with hands to get a soft dough.
  5. Take marble size balls of the dough and press between palms to get cookies of even thickness.
  6. Bake in the oven for 10 minutes or till the edges just begin to turn golden.
  7. Remove from the oven. Spread them on wire rack to cool.

My Tip:

Puree the beets well. Strain if necessary. Remove from the oven as soon as the edges begin to turn brown.

yes you can always make cookies in pressure cooker or kadhai...remove whistle and gasket...add 2 cups of salt , heat the cooker with it on medium flame for 10 mins, place the tray over the sieve and cook on low medium flame until cookie starts browning. there are cooker recipies in the app
