Ingredients to make Imam Bayildi

  • Eggplants - 4 large and firm
  • onion (chopped) - 2 medium size
  • tomato - 2(chopped)
  • 1 - 2 nutmeg
  • salt - as per taste
  • Sugat - 1tsp

How to make Imam Bayildi

  1. Cut each eggplant into 2 halves.Make crisscross indentation on each piece
  2. Soak in salted water flat part down for about 10 mins
  3. In a pan take oil,add chopped garlic,saute.Then add the onions.Fry for a while,finally add the tomatoes,mix well.Add salt till the tomatoes are all mashed well.Remove from flame ,let it cool.
  4. Take out the eggplants from water,sqeezing out all the water,pat dry and shallow fry them in medium flame till slightly golden .
  5. Arrange all the eggplants in a baking dish.Grate nutmeg over each piece.Scoop out approx.1 tsp of the tomato filling over each,sprinkle some sugar on top.Bake @ 180° for 25- 30 mins.
