Cheesy Khari puff sticks

ABOUT Cheesy Khari puff sticks RECIPE

A fusion take on the traditional Khari puffs with the addition of Parmesan cheese , no one can stop at one. Pair it with your favourite drink for any occasion.

Ingredients Serving: 8

  1. Puff pastry- 1 pack, thawed
  2. Parmesan cheese- 1 cup, finely grated
  3. Oil- 2 tsp
  4. Cumin Seeds- 1 tsp
  5. Curry leaves- 2 sprigs, fresh ones
  6. Shallot- 1 medium, finely chopped
  7. Coarse sea salt- to taste

Instructions

  1. Preheat oven to 176C and line 2 baking trays with baking paper
  2. If your puff pastry is not ready rolled, then roll it out to about 30 cms, 1/4 inch thickness. Sprinkle generously with cheese. Keep aside.
  3. Heat oil in a small pan and throw in the cumin seeds and curry leaves
  4. Once they turn crisp, in about a minute if the oil is perfectly hot, add the finely chopped shallot and keep sauteing till they turn crisp.
  5. This could take a while, but make sure you don't burn them, or else its could taste bitter.
  6. Once the mix turn crispy, drain them on paper towels and leave to cool.
  7. Once cool, crush them with a pestle and mortar, not to paste like consistency, but leaving a bit of bite to it.
  8. Season with salt and sprinkle this mix on top of the cheese covered puff pastry.
  9. Cut them in strips and place on the baking paper a few cm's apart. Bake for about 15 minutes or till the pastry is golden brown in colour.
  10. Take out of the oven, cool for a few minutes and bite into the crispy puff sticks warm.
  11. Serve with a cup of tea or as nibbles with your favourite cocktail, and its perfect.
