Cherry Cake

Ingredients to make Cherry Cake

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tbsp lemon zest
  • 1/2 cup oil
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 tbsp vanilla essence
  • 1 cup fresh cherries pitted and halved

How to make Cherry Cake

  1. Pre- heat the oven to 180°C. Grease the cake tin and dust it with all purpose flour.
  2. In a medium bowl, whisk flour, baking powder, salt and lemon zest.
  3. In a large bowl, using an electric mixer, beat oil and sugar until light and fluffy. With mixer on low, beat in eggs one at a time.
  4. Add vanilla and mix well.
  5. Alternately, beat in flour mixture and buttermilk, beginning and ending with flour mixture. Mix just until combined.
  6. Pour the batter into the tin and place the cherries on the top.
  7. Bake at 180°C for 10 minutes and then reduce the temperature to 150°C and bake for 50 minutes. until an inserted toothpick comes out clean.

My Tip:

Do not over mix while mixing the wet ingredients with dry ingredients. It will result in a dense cake
