Kerala style mutton soup

Ingredients to make Kerala style mutton soup

  • Mutton bone pieces with very little meat 300 grams
  • shallots 10 nos chopped
  • green chilly 3-4 (as per your taste) chopped
  • garlic chopped 8 nos
  • ginger chopped 1 small piece
  • tomato 1 big chopped
  • Whole garam masala
  • coconut oil 2-3 tbsp
  • turmeric powder 1 tsp
  • pepper powder to taste
  • Garam masala 1 tsp
  • lemon 1 no
  • coriander leaves to garnish
  • coriander stalk and root 1 small bunch
  • Tuvar dal washed 1/2 cup
  • salt to taste
  • water 1-1.5 litres

How to make Kerala style mutton soup

  1. Heat oil in a cooker or a deep bottomed pot.Add the whole garam masala, shallots,green chillies, ginger, garlic and curry leaves and a little salt. Saut for 2-3 minutes until the colour changes. Add chopped tomatoes and saut for another 3 minutes until soft.
  2. Add turmeric powder and half of the pepper powder and saut for a minute. Add water and the coriander stalk and roots(tie it together with a thread like a bouquet garni). Let it boil.
  3. Once it starts to boil, add dal and let it simmer slowly until the water reduces and the soup thickens. This could take about 45 minutes to one hour.
  4. Add salt to taste once the soup has reduced, add garam masala powder and the remaining pepper powder.
  5. Take out the coriander roots, add lemon juice to taste.
  6. For a better mouth feel, you can strain the soup, garnish with chopped coriander and serve it hot.

My Tip:

1.This is a healthy soup that can be had in all seasons. However, it is a must have during winters. 2. You can serve this with toasts of any bread of your choice and make this a complete meal. 3. Reduce the quantity of spice if you want to feed kids or elderly people. 4. Always add the salt once the soup is ready. You'll end up having a salty soup otherwise ! 5. If you're in a hurry, or do not have time to cook it slow, you can reduce the quantity of water and pressure cook it for 15-20 minutes.
