Black Forest Cake

Ingredients Serving: 8

  1. For chocolate base - 140 gms plain flour
  2. 2 tbsp cocoa powder
  3. baking powder - 1& 1/2 tsp
  4. 1/2 tsp Baking soda
  5. 3/4 cup (200gms) condensed milk
  6. 60 ml melted butter or margarine
  7. vanilla essence - 1 tsp
  8. For topping - 2 cups whipped cream
  9. 20-25 chopped glazed cherries
  10. 1/2 cup sugar syrup
  11. 2 tbsp of cherry liquor

Instructions

  1. Sieve the flour and cocoa powder together. Mix the condensed milk, melted butter, vanilla essence and 75 ml. of water and beat well.
  2. Add the prepared sieved flour-cocoa baking soda mixture and mix gently with a spatula. The batter should be of dropping consistency. Pour the batter into a greased and dusted 175 mm. (7") diameter tin.
  3. Bake in a pre-heated oven at 180 degree celsius for 25 minutes or till done. The cake is ready when it leaves the sides of the tin and is springy to touch.
  4. When ready, remove from the oven and leave aside for 1 minute. Invert the tin over a rack and tap sharply to unmould the cake. Keep aside to cool.
  5. Place the chocolate cake on a turntable and slice the cake horizontally into 3 equal parts. Keep aside.
  6. Combine the sugar syrup and cherry liquor in a bowl to make the soaking syrup and keep it aside. Soak the bottom layer of the chocolate cake with 1/3 of the soaking syrup. Spread 1/2 cup of cream on the soaked layer of the cake. Put 1/2 the cherries on top and sandwich with the second layer of the chocolate cake.
  7. Repeat the steps to make one more layer on top. Soak the topmost layer of the chocolate cake with the remaining soaking syrup. Spread the remaining cream evenly on the top and at the sides of the cake.
  8. Garnish with the remaining cream and cherries. Transfer the cake onto the cake board and refrigerate for 20 minutes to set.
