Handvo

Ingredients to make Handvo

  • 3 cups rice
  • 1 cup split Bengal gram
  • 1/2 cup split red gram
  • 1/2 cup split black gram
  • 3 cups butter milk
  • salt to taste
  • 4 tbsp sugar
  • 250g bottle gourd grated
  • 1 med sized potato cut to cubes
  • 1 small onion chopped
  • 2 tsp sesame seeds 1tsp for garnish
  • 1tsp mustard seeds
  • 3 tbsp oil
  • 1/2 tsp baking soda
  • 3 tbsp water
  • 1 tbsp chopped garlic
  • 1tsp ginger paste
  • 2 tsp red chilli powder
  • 1tsp turmeric powder

How to make Handvo

  1. Wash and soak rice, Bengal gram,black gram,red gram, overnight.
  2. In morning remove water and grind with butter milk to a nice paste .
  3. The mixture shouldn't be very watery .
  4. Add salt and mix well keep the mixture in a container in a dark place and leave to ferment.
  5. Now add the vegetables to this mixture.
  6. In a bowl mix water 1tbsp oil and soda and add to the mix.
  7. Add ginger paste.
  8. Add salt if required . Add turmeric ,red chilli powder ,sugar
  9. In a pan heat oil to this add mustard seeds once it sputters add sesame seeds and garlic . Cook till the garlic turns pinkish.
  10. Add this to the handva mixture
  11. Grease a handva pan and sprinkle Bengal gram flour . Pour the mixture and garnish with sesame seeds.
  12. In the handva pan small dish heat sand and put the main pan on top of it at a very low flame . Cook for 45 min and check inserting a toothpick. .if it comes out clean it's ready . Orelse cook for another 10 15 min.
  13. Let it cool for 20min . Run a knife along the edges and invert in a dish . Yummy Gujarati handva is ready to relish.
