Ingredients to make Tigelle Italian flat bread

  • flour- 31/2 cups
  • water - 1 cup
  • yeast- 2 teaspoons
  • butter/shortening- 21/2 tablespoons
  • salt - 1 & 1/2 teaspoons
  • sugar - 1 teaspoon
  • butter to grease

How to make Tigelle Italian flat bread

  1. Heat water in lukewarm, add a pinch of sugar and salt from the measurement then sprinkle yeast and leave aside undisturbed till it froths.
  2. In a stand mixer using hook attachment add flour and butter mix till it appears as a bread crumb mixture
  3. Add in yeast mixture, remaining salt and sugar mix well. Knead well for 10-15 minutes till it becomes non-sticky and pliable dough.
  4. Cover the dough with cling wrap and keep aside for 1-1/2 hrs. When the dough raises double in size. Take a small ball sized dough, roll thick and flat.
  5. Heat the griddle/grill pan coat some butter and flip the tigelle on both sides.

My Tip:

This is peasant's recipe and took an important place in Italian history. They ate them by slitting in the middle and stuffed some meat and sauces. I made a sauce with tomatoes to spread with caramelized onions and poached egg. You can bake them at 180 degree centigrade for 10-12 minutes.
