Ingredients to make Easy fruit cake

  • 210 gms brown sugar
  • 240 gms water
  • 55 gms butter
  • 2 tsp cinnamon powder
  • 300 gms mix of raisins-dried cranberries-tutti fruity etc
  • 2 eggs beaten
  • 195 gms all purpose flour
  • 1 tsp baking soda
  • 2 tsp vanilla essence
  • 150 gms chopped nuts walnuts & almonds and candied peels

How to make Easy fruit cake

  1. In a stove top compatible bowl, add sugar, water, butter, cinnamon powder and raisins. Cook over medium flame for 5 minutes after the mixture comes to a boil.
  2. Remove from heat, let it cool.
  3. Pre-heat the oven at 180 degrees Celsius.
  4. Once cool, add the rest of the ingredients and mix till all of them are well incorporated. Pour in a prepared loaf tin. Bake for 50-55 minutes or till done.
My Tip: The taste improves if the cake is allowed to age for a few days.
