About Quick Kaju Katli Recipe

Kaju katli also known as kaju Katari or kaju barfi, is an Indian dessert similar to a barfi. Kaju means cashew nut in Hindi. This is a simple and quick method of making it.

Quick Kaju Katli

Ingredients to make Quick Kaju Katli

  • cashew powder 1 Cup
  • Powdered sugar 3 or 4 Cup
  • ghee 1 Teaspoon
  • saffron stands 1 or 2 Teaspoon
  • water 2 Tablespoon

How to make Quick Kaju Katli

  1. In a heavy bottomed pan, heat ghee on medium heat.
  2. In a bowl mix the cashew powder and sugar very well.
  3. Add the mixture into the melted ghee and stir on medium heat for about 2 minutes until the sugar is melted and absorbed into the cashews.
  4. Make a well in the center, add water and saffron strands and mix well.
  5. Keep stirring continuously on low to medium heat till all the water is evaporated.
  6. Spread onto an ungreased plate evenly with 1/4 inch thickness and smooth the surface.
  7. Cut into diamond shape. I cut them using plunge cutters to give a different shape.
  8. U can either use a 'chandi ki varak' or use colored sugar like I did to decorate.

My Tip:

I made the cashew powder at home in a coffee grinder. Be very careful to only pulse it as cashews may begin to leave its oil.
