Ingredients Serving: 6

  1. 1 pound russet potatoes
  2. Half cup cashew
  3. Half cup cranberry
  4. 2 tsp chilli powder
  5. 2 tsp salt
  6. Oil for frying
  7. Melon scooper or spoon
  8. 4-5 cloves
  9. 3-4 cardamom pods
  10. 2-3 bay leaves

Instructions

  1. First peel the potatoes with a peeler and cut it in halves if the potatoes are really big you can make three pieces
  2. Scoop the middle portion from potato using a melon scooper or spoon
  3. Keep the little scoops separately
  4. Fry the potatoes in oil until golden turning both sizes
  5. Now fry the little scoops from potatoes separately
  6. Take a blender and blend the spices, cashew, cranberry and little potato scoops
  7. Add salt and chilli powder and blend one final time coarsely
  8. Scoop this filling into fried potatoes
  9. This can be served as a dry appetizer or can be served with red sabji gravy
