Take a pan, heat the oil in it and deep fry the onion slices till they turn a beautiful golden brown colour.
Put these onion slices onto a plate and drain the excess oil with paper towels. Keep aside.
Wash and soak the rice for 10 minutes before cooking.
Take a pot and pour in 2 and ½ cups of water. Bring this to a boil.
In the meantime, take a large pan and heat the ghee, fry the cumin seeds in it.
Once the cumin seeds start to crackle, put in the rice. Sauté and cook for 4-5 minutes.
Then pour in the boiling hot water. Let it simmer for 5 minutes.
Then add the salt according to taste. Cover with a lid and let cook for 10-12 minutes or till the rice is done.
Serve hot with a garnish of fried onions on top.
