- 100g Aspargus
- A handful Lettuce
- 6 Cherry tomatoes chopped into halves
- 1/2 cup Yellow bell pepper sliced
- 1 tbsp Olive oil
- 1 tsp Lemon juice.
- 1/2 tsp Pepper
- 1/2 tsp Salt
- Wash the lettuce thoroughly
- Boil the asparagus in salted water for 2 mins. Drain and wash with cold water.
- In a large bowl, add the lettuce, cherry tomatoes, bell pepper and asparagus. Toss well.
- Add the lemon juice and mix all the ingredients together.
- Season with salt and pepper and serve fresh.
