ABOUT Litti Chokha RECIPE

A very famous Bihari dish which has a healthy filling of roasted gram flour accompanied with two spicy side dishes. It is a complete meal by itself and is commonly eaten with ghee.

Ingredients Serving: 4

  1. Whole Wheat Flour 1 cup
  2. Sattu or Roasted gram flour 1 cup
  3. Onion 2 large sized
  4. Garlic 2 tsp
  5. Ginger 1 tsp
  6. Ajwain/ Carom seeds 1 tsp
  7. Black cumin seeds 1 tsp
  8. Mango pickle 4 tbsp
  9. Lemon 2 tbsp
  10. Green chillies 5 nos
  11. Coriander leaves, a handful
  12. Mustard oil 5 tbsp
  13. Ghee as required to dip the littis in
  14. Salt as per taste
  15. Potato 2 medium sized
  16. Brinjal (long ones) 1
  17. Tomato 2 medium sized

Instructions

  1. In a large bowl, add in the wheat flour, then add salt, few ajwain seeds, black cumin seeds and mix it well.
  2. Add water little by little to form a firm dough (it should be of the consistency of a roti dough). Then keep the dough to rest.
  3. In another bowl, mix in the sattu/ roasted gram flour, ajwain, black cumin seeds, pickle, 2 chopped onion, 1 tsp finely chopped garlic, 1 tsp finely chopped ginger, some chopped coriander, salt and mix it well together. Then add 1 tsp mustard oil and combine it well together.
  4. To prepare the potato chokha, pressure cook the potatoes. Once cooked, let them cool and mash well.
  5. Add in the salt, chopped onion, 1/4 tsp mustard oil, 1/4 tsp finely chopped green chillies, some chopped coriander, 1/4 tsp finely chopped garlic. Mix everything well, the chokha is ready.
  6. To prepare the brinjal and tomato chokha, coat oil on the outer layer of the brinjal and tomatoes. On a stove top, roast them till they are done.
  7. Once they cool down, remove the skin of brinjal and tomatoes. Mash it well.
  8. Add in the chopped onion, 1/4 tsp mustard oil, 1/4 tsp finely chopped green chillies, some chopped coriander, 1/4 tsp finely chopped garlic, salt to taste and mix it well.
  9. Divide the lifting dough into smaller portions like we do similarly for rotis. Take one portion and form a bowl using both hands.
  10. Stuff in the sattu mixture (ensure you have enough filling so that the litti doesn't taste bland).
  11. Once all the littis are filled, place them on a microwave stand, then place this in the microwave oven. Turn the grill mode on in the microwave and grill for 10 minutes.
  12. After 10 minutes, turn the littis to the other side and grill for another 10 minutes. Once the littis turn golden in colour, take them out of the oven.
  13. Dip the littis in ghee and serve them hot with the chokha.
