Ingredients Serving: 4

  1. Mustard leaves 2 bunches
  2. Bathua leaves 1 bunch
  3. Spinach 1 bunch
  4. Ginger chopped 2 tbsp
  5. Garlic chopped 3 tbsp
  6. Onions chopped 4 medium sized
  7. Green chillies chopped 5-8
  8. Makki/ Maize flour 2 tbsp
  9. Hing/ Asafoetida a pinch
  10. Ghee 3 tbsp
  11. Butter 4 tbsp
  12. Salt to taste
  13. Makki ki roti Ingredients:
  14. Corn flour 4 tbsp
  15. Ajwain/ Carom seeds a pinch
  16. Salt a pinch
  17. Water to knead
  18. Ghee to fry

Instructions

  1. Remove big leaves of mustard leaves and peel as much stems as you can, so that there are no thread like structures in the saag.
  2. Wash and chop the mustard, bathua and palak leaves.
  3. In a pressure cooker, add 1 glass of water, salt , all the leaves and cook for 20 minutes or till 9-10 whistles blow. Then let it cool, blend it till a desired smoothness and keep it aside.
  4. Heat oil in a kadai, add hing, ginger, garlic, green chillies, onions and saute till it turns golden brown in colour.
  5. Add in the makki atta/ maize flour, butter and saute for 3-4 minutes. Then mix in the saag and cook while stirring occasionally for 5-8 minutes.
  6. To prepare the makki ki rotis, heat water just enough that you can put in your fingers.
  7. Take the makki flour, salt , ajwain and make a dough by adding warm water. Then knead it for 5 minutes and make ball shapes.
  8. Take the wheat flour to dust and roll out to make chappati shapes from the dough balls (You can also make the chappatis by keeping a plastic sheet at the bottom and the top).
  9. Heat tawa on the stove, put the chappatis to cook. Once it is done, it will leave the tawa, then flip and add ghee on both sides.
  10. Serve these hot makki rotis with sarso ka saag.
