Ingredients Serving: 4

  1. Fresh and firm baby corns: 20
  2. Corn Flour: 2.5 tbsp
  3. Spring Onions: 4-5 sprigs
  4. Capsicum: 1/2 sliced into strips
  5. Green chillies: 3
  6. Gralic: 2-3 pods, chopped
  7. Ginger: 1/2 inch finely chopped
  8. Vinegar: 1 tsp
  9. Soy Sauce: 1 tsp
  10. Pepper Powder: 1/2 tsp
  11. Salt to taste
  12. Oil to fry

Instructions

  1. Take 1 tbsp of corn flour and add water to make a thin batter.
  2. Cut the baby corn in the middle, once again slice it to 2 inch pieces and immerse them into the prepared corn starch.
  3. Heat oil in a deep bottomed pan, once it's hot, slowly add in the baby corn pieces and deep fry them for 3-4 minutes. Once they turn golden brown in colour, take them out and place them on an absorbent paper. (Repeat this process until the entire baby corn is deep fried.)
  4. Heat a tbsp of oil in a pan, add in the chopped ginger and garlic and fry it for 2 minutes. Now add in the sliced green chillies and fry for a minute.
  5. Add in the chopped onions and capsicum and cook until they are half done. Now add in the fried baby corn, pepper and salt and mix it well. Pour the vinegar and soy sauce into the pan and give it a nice stir.
  6. Now in a small mixing bowl, add in the remaining corn flour along with some water and make into a medium thick batter and pour this into the pan. Mix it well.
  7. Boil and cook until the entire sauce is absorbed and dry.
  8. Take it out in a serving bowl and garnish it with spring onion greens. Serve it with fried rice for best taste.
