ABOUT Schezwan Chicken RECIPE

A delicious and very famous chicken starter amongst Chinese dishes. It is mildly spicy and the use of sichuan peppercorns in this dish lends a flavor and aroma that is unique and adds a special flavour.

Ingredients Serving: 3

  1. Schezwan Sauce- 4 tsp (store bought)
  2. Sugar 1/2 tsp
  3. Sichuan peppercorns crushed 1 tsp
  4. Salt to taste
  5. Water 1/4 cup
  6. Oil 1/2 cup
  7. Chopped coriander leaves to garnish
  8. For the Marination:
  9. Chicken 300 grams
  10. Garlic chopped 2 tsp
  11. Peppercorns cracked 1 tsp
  12. Chilli flakes 2 tsp
  13. Soya sauce 2 tsp
  14. Cornflour 3 tsp
  15. Salt to taste

Instructions

  1. In a bowl, take the chicken and all the ingredients mentioned in the marination list. Mix well till all the ingredients nicely coat the chicken well with the ingredients. Keep it aside for about 10 mins.
  2. In a pan heat oil. Once the oil is heated, add in the chicken pieces in batches and deep fry the chicken on a medium heat till it turns golden. This will take around 5-10 mins. Keep it aside.
  3. In a frying pan, heat 3-4 tsp of oil (use the same oil which you used to fry the chicken). Add in the schezwan sauce, crushed sichuan peppercorns, sugar, salt to taste and water.
  4. Mix it well. Once it starts to boil, add in the fried chicken, toss it nicely till the chicken is coated well with the sauce.
  5. Fry it for around 3-5 mins. Then take it off the heat.
  6. Garnish with coriander leaves and serve.
