ABOUT Sweet and Spicy Pork Ribs RECIPE

Super succulent pork ribs that are slightly sweet and spicy with mild flavour from spices that is deliciously tossed in sauces.

Ingredients Serving: 3

  1. Pork ribs 400 grams
  2. Water 1/2 cup
  3. Oil 4 tsp
  4. Onion 1 large sliced
  5. Ginger-Garlic crushed 1 tsp
  6. Tomato 1 chopped
  7. Honey 2 tsp
  8. Sugar 1 tsp
  9. Tomato ketchup 2 tsp
  10. Soya sauce 2 tsp
  11. Chilli sauce 1 tsp
  12. Vinegar 1 tsp
  13. Green chillies 2 chopped
  14. Peppercorns 1/2 tsp, cracked
  15. Green capsicum thinly sliced 1/2 cup
  16. Red capsicum thinly sliced 1/2 cup
  17. For grinding:
  18. Star anise 1 small
  19. Cloves 2
  20. Cinnamon 3 cm stick
  21. Fennel 1/4 tsp
  22. For Marination:
  23. Ginger-Garlic paste 1 tsp
  24. Chilli flakes 1 tsp
  25. Salt to taste

Instructions

  1. Marinate the pork ribs in ginger-garlic paste, chilli flakes and salt for a minimum of 30 mins.
  2. Take the marinated ribs in a pressure cooker, add water and pressure cook for 10 mins. (If the water remains, let the water evaporate completely.)
  3. In a pan, roast the pork on a medium flame for another 5 mins while turning sides. Then keep it aside.
  4. In a pan, heat oil and add in the onions, crushed ginger, garlic and saute for a minute.
  5. Then add in the tomato and saute till the tomato is mushy. Next, add in the grounded masala, honey, sugar, tomato sauce, soy sauce, chilli sauce, vinegar and saute it well for 2 mins.
  6. Now add in the pork ribs, chopped green chillies, cracked black pepper and thinly sliced capsicums. Mix it well and cook for about 5 mins on a medium heat.
  7. Finally add in the chopped coriander, give it a quick stir and take it off the flame.
