ABOUT Cream of Spinach RECIPE

Made from the fresh Spinach leave is this hearty soup.

Ingredients Serving: 2

  1. 2 cups of Spinach
  2. 1/2 cup Onion chopped
  3. 2 tbsp Cream
  4. 2 tbsp Cornflour
  5. 2 tbsp Butter
  6. Salt and pepper to taste

Instructions

  1. Heat butter in a deep pan, add onions and stir for 2 mins until onions become soft and translucent.
  2. Add spinach and saute over medium heat for a minute.
  3. Add 2 cups of water. Stir well to mix and cook for 5-10 mins.
  4. Remove from heat and process in a blender to make a smooth puree.
  5. Return to the pan and add cream and cornflour. Blend well and cook for 2 mins.
  6. Season with salt and pepper and cook for 1 more minute.
  7. Garnish with strips of spinach leaves and serve hot!
