Cream of Spinach

Ingredients to make Cream of Spinach

  • 2 cups of Spinach
  • 1/2 cup Onion chopped
  • 2 tbsp Cream
  • 2 tbsp Cornflour
  • 2 tbsp Butter
  • Salt and pepper to taste

How to make Cream of Spinach

  1. Heat butter in a deep pan, add onions and stir for 2 mins until onions become soft and translucent.
  2. Add spinach and saute over medium heat for a minute.
  3. Add 2 cups of water. Stir well to mix and cook for 5-10 mins.
  4. Remove from heat and process in a blender to make a smooth puree.
  5. Return to the pan and add cream and cornflour. Blend well and cook for 2 mins.
  6. Season with salt and pepper and cook for 1 more minute.
  7. Garnish with strips of spinach leaves and serve hot!

This is a simple superb soup. Tried it last night. Only difference is that I added a spoon of sugar to cut the bitterness of palak
