Instant Carrot Pickle/ Relish

Ingredients to make Instant Carrot Pickle/ Relish

  • 2 big sized dark red carrots
  • 1 tsp chilli powder
  • 1/2 tsp haldi/ turmeric
  • 1 tbsp split yellow mustard seeds
  • 1/4 tsp lime juice
  • 3-4 fenugreek seeds
  • jaggery a small piece
  • For the tadka:
  • 1 tbsp mustard oil
  • asafoetida, a generous pinch
  • 3-4 fenugreek seeds

How to make Instant Carrot Pickle/ Relish

  1. Cut the carrots lengthwise (as shown in the picture), then add in the spices (1 tsp chilli powder, 1/2 tsp haldi/ turmeric, 1 tbsp split yellow mustard seeds, salt and mix well).
  2. Add 1/4 tsp lime juice, jaggery and mix it well (if needed for sweetness).
  3. To prepare the tadka, heat 1 tbsp mustard oil, asafoetida a generous pinch and 3-4 fenugreek seeds. Then mix the tadka with the carrot mixture.
  4. Serve it instantly or store and use as required.
