Ingredients Serving: 4

  1. For the schezuan sauce:
  2. 2/3 cup oil
  3. 1/3 cup chopped celery
  4. 1/3 cup chopped garlic
  5. 1/3 cup chopped ginger
  6. 2/3 cup tomato puree
  7. 3/4 cup red chilli paste
  8. Salt to taste
  9. 2 and 1/2 tsp vinegar
  10. 2 and 1/2 tsp sugar
  11. 5 cups fried noodles
  12. 2/3 cup chopped spring onion
  13. 2/3 cup shredded cabbage
  14. 1/2 cup grated carrot
  15. 1/3 cup thinly sliced capsicum
  16. 1/2 cup tomato ketchup
  17. 1/2 cup schezuan sauce (recipe above)
  18. Salt to taste

Instructions

  1. To prepare the schezuan sauce, heat the oil in pan, then add in the celery, garlic and ginger. Mix well and saute on a medium flame for 30 seconds.
  2. Add in the tomato puree and mix it well, cook on a medium flame for 5 minutes.
  3. Then add in the salt, vinegar, sugar and cook for another minute.
  4. To make the bhel, combine the rest of the ingredients in a bowl and toss it well till the noodles are evenly coated with the sauces.
  5. Serve it immediately.
