ABOUT Easy Thai Green Chicken Curry RECIPE

Thai Curry is one of the most easiest Asian curries to cook. Coconut milk is cooked along with thai paste and spices that give it an exotic flavor. It tastes best when served with hot and steamy rice.

Ingredients Serving: 4

  1. Boneless and skinless chicken breast 1 pound/ 450 gms
  2. Dark soy sauce 2 tablespoons
  3. All purpose flour/ Maida 1 tablespoon
  4. Cooking oil 2 tablespoons
  5. Thai green curry paste 2 tablespoons
  6. Few green onions, chopped
  7. Peeled and grated Garlic cloves 3
  8. Peeled and grated fresh ginger 1 teaspoon
  9. Coconut milk 2 cups
  10. Fish sauce 1 tablespoon
  11. Vertically thinly sliced Red Bell Pepper 1
  12. Finely Cubed Carrot 1
  13. Chopped Cilantro leaves, for garnishing (optional)

Instructions

  1. Mix the chicken with 1 tablespoon dark soy sauce and flour, coat the pieces evenly. Keep it aside for 10 minutes.
  2. Heat the oil in a large skillet over medium-high heat. Place the chicken in the skillet, stir and cook until it's browned for about 5 minutes. Then remove the chicken.
  3. Heat a teaspoon of oil in a cooking pot, then add in the ginger, garlic and veggies. Mix well and cook it covered for 2 mins.
  4. Next, stir in the curry paste. Cook for 1 minute until it's fragrant, then stir in the green onions and cook for an additional 1 minute.
  5. Add the browned chicken to this mixture and stir it well to coat with the curry mixture. Pour in the coconut milk, fish sauce, 1 tablespoon soy sauce into the chicken-curry mixture.
  6. Allow it to simmer and cook over medium heat for 20 minutes until the chicken is tender.
  7. Serve this dish with a garnish of cilantro leaves.
