Easy Thai Green Chicken Curry

Ingredients to make Easy Thai Green Chicken Curry

  • Boneless and skinless chicken breast 1 pound/ 450 gms
  • Dark soy sauce 2 tablespoons
  • all purpose flour/ Maida 1 tablespoon
  • Cooking oil 2 tablespoons
  • Thai green curry paste 2 tablespoons
  • Few green onions, chopped
  • Peeled and grated garlic cloves 3
  • Peeled and grated fresh ginger 1 teaspoon
  • coconut milk 2 cups
  • Fish sauce 1 tablespoon
  • Vertically thinly sliced Red Bell pepper 1
  • Finely Cubed carrot 1
  • Chopped cilantro leaves, for garnishing (optional)

How to make Easy Thai Green Chicken Curry

  1. Mix the chicken with 1 tablespoon dark soy sauce and flour, coat the pieces evenly. Keep it aside for 10 minutes.
  2. Heat the oil in a large skillet over medium-high heat. Place the chicken in the skillet, stir and cook until it's browned for about 5 minutes. Then remove the chicken.
  3. Heat a teaspoon of oil in a cooking pot, then add in the ginger, garlic and veggies. Mix well and cook it covered for 2 mins.
  4. Next, stir in the curry paste. Cook for 1 minute until it's fragrant, then stir in the green onions and cook for an additional 1 minute.
  5. Add the browned chicken to this mixture and stir it well to coat with the curry mixture. Pour in the coconut milk, fish sauce, 1 tablespoon soy sauce into the chicken-curry mixture.
  6. Allow it to simmer and cook over medium heat for 20 minutes until the chicken is tender.
  7. Serve this dish with a garnish of cilantro leaves.
